Vegan Banana Blueberry Chocolate Chip Muffins

I have been playing with this recipe for a long time now and I think it's finally ready to share with the world... Introducing my vegan banana blueberry chocolate chip muffins!

 

 

Ingredients:

 

1 cup roughly mashed banana (2 medium bananas)

1 cup fresh roughly mashed blueberries

1 cup almond milk

1 tsp apple cider vinegar

1/4 cup melted coconut oil

2 cups white spelt flour

4 tbsp natural cane sugar

2 tsp baking powder

1/12 tsp cinnamon

1/2 tsp baking soda

1 cup vegan dark chocolate chips

 

Instructions:

 

Pre-heat the oven to 350 degrees.

In one bowl roughly mash your bananas and blueberries.

In another bowl mix all of the wet ingredients together.

In a third bowl mix all of the dry ingredients together.

Then mix your wet and dry ingredients together, adding the bananas and blueberries last.

Scoop them into mini cupcake/muffin pans - you may need to oil the pan first. 

Bake at 350 degrees for 25-27 minutes.

Makes approximately 24 mini muffins.

 

Let cool and enjoy!
