I love healthy chocolate recipes that are easy to make, and I'm sure I'm not the only one! I hope you guys enjoy this recipe as much as I do. You can feel free to double up the ingredients to make extra and they store well in the freezer for up to 4 weeks.
Combine the below ingredients in a processor:
1 cup organic cacao powder
1/2 cup natural peanut butter (crunchy or smooth)
1 tsp sea salt
2 cups whole rolled oats
5-6 pitted medjool dates
1/3 cup coconut oil
2 tbsp hemp hearts
Pulse until well blended (if mixture needs moisture add more coconut oil)
AND then add to processor:
1/2 cup cacao nibs and 1/2 cup crushed hazelnuts.
Continue pulsing until all is mixed well. Place mixture into container with parchment paper. Let mixture stand in fridge for 30 minutes, then form/roll into 1 inch balls. Coat in shredded coconut flakes (and/or more hazelnut pieces) and place balls back into container and chill in fridge for another hour before serving.
