Vegan "Cheesy" Popcorn
A great snack that we all love, POPCORN! Before you add all of the butter and artificial flavoring, popcorn has the opportunity to be a light healthy snack. Keep in mind that microwave popcorn is best avoided at all costs. That's right, we're making popcorn the old school way. To enjoy this snack in a healthy way, try making it like our grandparents did... on the stove top!
A report from the FDA indicates that a chemical coating used in microwave popcorn bags breaks down when heated into a substance called perfluorooctanoic (PFOA). The Environmental Protection Agency has identified PFOA as “likely carcinogen.” Another study has found an acid that can be extracted from the chemical and is “likely to cause cancer" in humans.
It's very important to make sure you buy Certified Organic popcorn kernels for the health of your body and the environment. Also, make sure you are using an oil with a high cooking point such as coconut or avocado oil. Other oils like olive, canola, or vegetable go rancid after being heated and create free radicals in the body.
Ingredients: • 4 tablespoons coconut oil
• 1/2 cup organic corn kernels
• 1 teaspoon turmeric powder
• 2 tablespoons nutritional yeast • 1/2 teaspoon sea salt • Sprinkle of black pepper
In a medium size pot on the stove melt the coconut oil on medium heat. Once melted, add one popcorn kernel and wait for it to pop before adding the rest - this let's you know when the oil is the right temperature. Add the rest of the kernels and cover the pot with a lid. Give the pot a shake every so often and remove from heat when you hear no more pops! Put into a large bowl and mix in your flavouring. The nutritional yeast makes for a great cheesy taste and texture! If you are having trouble getting it to stick, just mist your popcorn lightly with water in a spray bottle then add the toppings after.
