Summer Blueberry Crumble

This blueberry crumble is so easy to make, healthy and delicious! When in season, try to get local blueberries from your farmers and use them within a couple days.

Bottom: 2 cups blueberries

Topping: 1 cup whole rolled oats (I like Bob's Red Mill best) 1/4 cup almond flour (or oat flour) 2 tbsp coconut flakes 1 tsp cinnamon 1/4 cup coconut oil 1/4 cup maple syrup (I’d try 1/8 cup next time).

Spread the blueberries out in the bottom of the baking dish.

Mix all the topping ingredients together and sprinkle on top of the berries.

Bake at 350F for about 30 minutes Broil top on low for 3 minutes


Blueberries are a potent antioxidant that stimulates blood flow to the brain and improves memory. They are packed full of valuable nutrients including fibre, vitamin C and vitamin K. Blueberries are know to protect against ageing and cancer as well as lower high blood pressure.

In the summer trying freezing them and snacking on them as a frozen treat for hot days - kids love this!
