Carrot and Beet Coleslaw with Mangos


I know this may sound like a weird mix, but it's super delicious! You can use different gating and slicing attachments in your food processor to make this but I did it the hard way and grated everything by hand.

And I apologize in advance, but I don't know the amounts that I used for this recipe, so I only have the ingredients for you. I threw it together quickly for a family BBQ potluck and it was a huge hit so I had to share!

Grate:

Carrots

Beets

Slice:

Red peppers

Purple/red cabbage

Dice:

Fresh mango (without skin)

Dressing:

Olive oil

Lemon juice

Apple cider vinegar

Small amount of real maple syrup

Top with fresh cilantro and sesame seeds!
