Minestrone Vegetable Soup


AMAZING minestrone vegetable soup! I've perfected this with the help of my significant other, and accompanied by fresh ciabatta buns. This recipe is super easy and makes enough to serve six people.

• 7 cups low sodium veg broth

• 1 can crushed tomatoes

• 1 yellow onion

• 3 cloves garlic

• 2 carrots

• 3 celery stalks

• 1 large potato

• 2 large tomatoes

• 1/2 cup dry green lentils

• 1 cup small pasta shapes

• 2 handfuls baby kale

• 2 tsp red wine vinegar

• Add salt, pepper rosemary, basil, parsley to taste

Chop everything up and let it simmer on the stove in a large wok for 30 minutes with the vegetable broth. Add the pasta shapes and kale 10 minutes before its done.
